The fresh mass of fat and lean pork which serves as a base of the cured chorizo before being embedded is used for another, fantastic, traditional food from Spain. It is a seasonal product. The spicy minced chorizo is delicious passed through the pan without adding oil, alone or with bread, potatoes or a couple of fried eggs. It combines perfectly with tomato for a delicious pasta with chorizo.
